The Red Currant or Redcurrant (Ribes rubrum) belongs botanically to the family Grossulariaceae. It is a small perennial deciduous fruit-bearing shrub, without thorns, which can reach a height of 1.5 to 3 m. The European Black Currant prefers sunny or semi-shaded places - especially in areas where temperatures are very high in summer - and is extremely resistant to frost and very low temperatures, even when they reach -34 °C. It is grown in light, medium or heavy soils, with a slightly acidic to alkaline reaction (6-8, optimum: 6.7-7), which drain well and contain high levels of organic matter. Redcurrants flower in spring, with greenish or pink flowers. If the variety is not self-fertile, a pollinating variety needs to be planted in order for the plants to produce fruit. Fruit set is observed from the beginning of summer, with Red, spherical-shaped berry fruits. The fruit is eaten fresh, frozen or even dried. They have a rather sour and stewy taste and are highly nutritious.
