The European Gooseberry (Ribes uva-crispa-syn. Ribes grossularia) belongs botanically to the family Grossulariaceae. It is a medium sised perennial deciduous fruit-bearing shrub, with thorns, which can reach a height of 2.5 to 3 m. The European Gooseberry prefers sunny or semi-shaded places - especially in areas where temperatures are very high in summer - and is extremely resistant to frost and very low temperatures, even when they reach -45 °C. It is grown in light, medium or heavy moist soils, with an acidic to alkaline reaction (5.5-8, optimum: 6-6.5), which contain high levels of organic matter. European Gooseberries flower in spring, with greenish-white or red flowers. Fruiting occurs from mid to late summer, in bunches of whitish-green, spherical-shaped berry fruits (but red, purple, yellow and white fruits are also present). The fruits are eaten fresh or cooked. If harvested at full ripeness they have a very sweet taste and are highly nutritious.
