The Japanese Persimmon (Diospyros kaki - Diospyros kaki) belongs botanically to the genus Diospyros and the family of Ebenaceae. It is a small deciduous fruit tree whose height can reach 5 to 10 m. Seeks sunny places in tropical or temperate regions, while the tree has remarkable resistance to low temperatures (-12 to -15 °C). It is cultivated in various soil types, but performs best in medium textured soils, which are acidic to slightly alkaline, and drain well. The Japanese Persimmon has simple, leathery, elliptical-ovate, toothed, green leaves, and reddish-white flowers, dioecious - although some varieties are monoecious or have only female flowers. The tree blooms from late spring to early summer, and ripens its fruits, which are berries, from late September to November. Although all varieties are parthenocarpic, pollination favors greater fruit production. The Japanese Persimmon enters fruiting from the 3rd to the 6th year of cultivation, reaches normal yields around the 7th to the 10th year, remaining productive until the age of 30 to 50 years. The Persimmon fruits are orange in color, grow seeds or are seedless (parthenocarpic), and their taste varies from astringent to non-astringent - like the sweet fruits of the Jiro variety.
